Yields approximately 24 muffins, OR 3-4 pumpkin loaves.
Ingredients:
- 3.5 cups flour, self-rising
- 2 tsp baking soda
- 1.5 tsp salt
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 tsp allspice
- 1.5 cups sugar
- 1.5 cups brown sugar
- 1 cup vegetable oil
- 2 cups canned pumpkin
- 4 eggs
- Powdered sugar (optional)
Directions:
- Using a mixer, mix vegetable oil, pumpkin, and eggs.
- Add sugars.
- In a separate bowl, mix together flour, baking soda, salt, nutmeg, cinnamon, allspice.
- Add flour mixture to wet ingredients.
- Bake at 350 for approximately 25-30 minutes, or until toothpick comes out clean.
- Dust with powdered sugar WHILE HOT.
